Veggie Sushi Rolls: the quick way
This is my newest favorite snack. Credit belongs to Whole Living magazine.
1 brown rice cake
1/4 to 1/2 a ripe avocado
a pinch of sea salt
1/4 English cucumber, diced
1/4 teaspon sesame oil
3/4 teaspooon rice wine vinegar
Mash the avocado and spread it on the rice cake. Sprinkle with salt. Toss the diced cucumber with the oil and vinegar and layer on top of the avocado. Sprinkle with sesame seeds and enjoy and end feeling virtuous about what a healthy snack you just ate.
*A mixture of black and white sesame seeds is interesting and looks especially nice if you want to make miniature versions of this for entertaining guests.
