Sparkling Cucumber Cooler

My new garden bed is producing a bumper crop of miniature cocktail heirloom cucumbers. I like to eat them out of hand, but here is another favorite option for a cooling summer drink.

Serves 1.

6-7 mini cucumbers (or 1 large cucumber)
sparkling water
1 lime
mint leaves


  • Muddle (crush) some mint leaves in the bottom of glass.
  • Put ice in the glass.
  • Juice the cucumber(s).
  • Mix the juice half and half with sparkling water over the ice.
  • Squeeze in lime juice to taste, up to half a lime.
  • Garnish with thin cucumber slices and lime wedges.
