Recipe: Sunflower Seed "Cheese"
People who avoid dairy cheese often make a tasty "cheese" spread out of seeds or nuts.
1 cup sunflower seeds
1 garlic clove
2 tablespoons of soy sauce
1/4 cup fresh parsley
1/4 cup fresh lemon juice
2 tablespoons of water
Cayenne pepper to taste
Combine all ingredients in a blender or a food processor until smooth. You may need to stop and scrape down the sides periodically while blending. I prefer to cook the chopped garlic in a tiny bit of olive oil before adding it to the blender and processing the cheese, but you could also use it raw.
