Recipe: Greek Flatbread


This makes a healthy appetizer for any holiday party. If you desire, you can leave off the cheese.

Use a pre-prepared flatbread or pizza crust (gluten-free, etc., according to your needs). Brush it with olive oil.

Instead of traditional pizza sauce, blend 1 15 oz can of chickpeas (drained) with the juice of half a lemon, 2 tbsp olive oil, and 1/4 tsp salt.

Spread the chickpea mixture on the flatbread and top with a variety of Mediterranean vegetables: tomato slices, artichoke hearts, black olives, and/or bell peppers. Sprinkle with a teaspoon of dried oregano and some freshly cracked black pepper. You can also add 1/2 cup of feta cheese, if you desire.

Bake the flatbread at 400 degrees in a preheated oven for 15-20 minutes, until the crust has browned.
