Orange Chia Seed Breakfast Pudding
This is a tasty and filling snack or light meal any time of the day. Add a sprinkle of cinnamon or nutmeg on top for an extra treat.
1 cup almond milk
3 soft dates
1 orange, zested and separated into segments
1/2 cup orange juice
1/3 cup chia seeds
Process the almond milk, dates, orange zest, and orange juice in a blender until smooth. Stir in the chia seeds and orange segments and refrigerate at least 30 minutes until the pudding is set or up to overnight. It's delicious plain or topped with granola.
