This is my favorite new thing with which to dress salads and sandwiches! (Credit Vegetarian Times magazine, June 2014 issue.)
1 small avocado
1/4 cup chives
3 tbsp of lemon juice
2 tbsp of fresh tarragon
1 tsp honey
1 clove garlic (I roasted mine.)
1/4 cup olive oil
Blend the first 6 ingredients in a blender until smooth. With the machine running on low, drizzle in the oil until it is emulsified. Season with salt and pepper as desired.
Seriously, try to buy the fresh tarragon, or better yet, grow some in a little pot outside your door. The fresh leaves really make this something special!
